Traditional chimarrao from the Brazilian manufacturer Yacuy contains finely ground powder leaves (75%) and medium-sized stems (25%). Chimarrao significantly differs in color, texture, and taste from Argentine, Paraguayan, or Uruguayan yerba, resembling more of a green matcha tea - a powder of finely chopped leaves with a small amount of stems. It is usually vacuum-packed within the first week after harvest, maintaining a higher chlorophyll level, which gives it a bright neon green color. The beverage has an exceptionally gentle yet intense taste and strong stimulating properties. Its distinct, fresh green color is due to the quick processing immediately after harvest, with very fast drying without long storage aging. The flavor and aroma predominantly have typical grassy notes. For chimarrao, it is advisable to use a good bombilla, which should not be moved during sipping.
