Traditional chimarrao from the Brazilian producer Yacuy, containing finely ground powdery leaves and medium-sized stems. It has a very specific, distinct grassy aroma with hints of nettles, yet it is also creamily sweet. The infusion has a bright green color, and the dominating fresh grassy and meadow tones are again underlined by a sweet and creamy base. Chimarrao significantly differs in color, texture, and flavor from Argentine, Paraguayan, or Uruguayan yerba mate and resembles more of a green tea matcha – a powder made from finely chopped leaves with a small amount of stems. It is usually vacuum-sealed within the first week after harvest, maintaining a higher level of chlorophyll, which gives it a neon green color. As the name suggests, this is organic yerba mate grown without the use of chemical pesticides and fertilizers, which allows it to withstand many infusions – it can be poured up to ten times in a calabaza. The product has certifications for organic food: Certificación Orgánica Brasil and ECOCERT BRASIL. Since the mate is very powdery, it is worth having a good bombilla, and avoid moving it too much while drinking. The beverage has an exceptionally smooth taste and quite strong stimulating properties. Its intense green color is due to rapid processing immediately after harvest and very quick drying without long aging in storage. The Yacuy brand was founded in 1948 and is particularly popular in its home country of Brazil and neighboring Uruguay.
